Food: The Language of Love

February 01, 2019 | Recipes

They say the way to someone’s heart is through their stomach, and what better way to express how much you love your significant other on Valentine’s Day by cooking them a meal? We’ve put together a list of recipes ranging from easy to slightly difficult levels that you can try making yourself!

Easy: Linguine with Shrimp Scampi

If you’ve not spent much time in the kitchen or cook often, a fuss-free recipe is the best route to take for your first attempt at making dinner! Pasta is typically regarded as an easy dish to make because its sauces are simple, just like this one.

What you’ll need:

Vegetable oil
1 tablespoon of kosher salt

1 1/2 teaspoons of kosher salt
3/4 pound of linguine
3 tablespoons of unsalted butter
2 1/2 tablespoons of olive oil
4 cloves of garlic, miced
16 shrimps, peeled and deveined
1/4 teaspoon of ground black pepper
1/3 cup fresh parsley leaves, chopped
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon of hot red pepper flakes

How To Make It

You’ll first need to boil salted water and some oil in a large pot before adding the linguine in to cook for a few minutes. Then, in another heavy-bottomed pan, melt the olive oil and butter over medium heat. Once that’s done, saute the garlic for a minute then add the shrimp, salt and pepper (to taste) until it’s cooked thoroughly. Next, remove it from the heat and add the remaining ingredients (parsley, lemon zest, juice and slices, and red pepper flakes) and cooked linguine to the mix. Toss to combine, and it’s ready to be served!

Medium: Indian-spiced Roast Chicken

If you know the difference between turmeric, cumin and fenugreek without looking at the label, and keen to learn how to marinate your proteins perfectly, then this level is perfect for you. Show off your amateur cooking skills this Valentine’s with this dish!

What You’ll Need:

1/2 cup of Greek yoghurt
1.6kg whole chicken, butterflied
1kg desiree potatoes, halved
1 tablespoon of extra virgin olive oil
1 cup of frozen peas, defrosted
2 long fresh green chillies, thinly sliced

Spice Mix
1 tablespoon of finely grated fresh ginger
2 garlic cloves, finely chopped
2 teaspoons of ground cumin
2 teaspoon of ground coriander
1 teaspoon of sea salt flakes
1/2 teaspoon of chilli powder
1/2 teaspoon of turmeric

How To Make It:

The spice mix for this dish requires a few hours to make (or overnight if you want to put in more effort!). Combine all the ingredients for the spice mix in a bowl, then stir in half of the mix with yoghurt. Once it’s mixed nicely, coat the chicken on both sides, cover the bowl and place it in the fridge for 4 hours. While that sits, boil the potatoes in a large saucepan until it’s tender, then return it to a baking dish and add olive oil and remaining spice mix. Layer the chicken on top too, and set the roast for 45 minutes. Finally, sprinkle the sliced chilli and add extra yoghurt on the side.

Hard: Steak with Chipotle-Lime Chimichurri

Cooking steak requires both delicacy and precision for it to be cooked to medium-well perfection (anything more is blasphemous). If you pay attention to details and want to make something that’s rich in flavour, then, this recipe is perfect for you.

2 cups of fresh parsley leaves

1/2 cup of fresh cilantro leaves

1/2 medium red onion, chopped

2 chipotle peppers in adobo sauce

5 garlic cloves, sliced

1/2 cup of olive oil

1 teaspoon lime zest, grated

1/4 cup of lime juice

3 teaspoons of dried oregano

1 and 1/4 teaspoons salt, divided

3/4 teaspoon pepper, divided

2 beef top sirloin steaks

How To Make It

Place the parsley, cilantro, red onion, chipotle and garlic cloves in a food processor until it’s finely chopped to make a refreshing batch of chimichurri. Then, add lime zest, lime juice, oregano, salt and pepper into the process until it’s blended. Transfer it to a bowl and refrigerate it until it’s time to serve. Next up, steaks! Sprinkle the steaks with salt and pepper, and grill over medium heat for 8 minutes on each side Let it stand for 5 minutes before slicing, then serve with chimichurri. And it’s done!
